Step 1
Spray cold grates of gas grill with grilling spray; preheat for medium-high heat. Divide and shape beef into eight 6-ounce patties. Press down slightly in the center of each patty to make the burger thinner in the center, this will help the burger cook evenly.

Step 2
Season burgers on both sides with salt and pepper. Grill burgers until charred (160°F), turning occasionally. Top with cheese and cook until melted.

Step 3
Spread ketchup on bottom of toasted buns. Top with pickles, onions, burger patties, tomatoes, and lettuce. Spread mayo and mustard on top buns and place on burgers.
