Chorizo sausage
2 patties
Egg, folded

Red onion, diced and sautéed
1 tbsp
Green bell pepper, diced and sautéed
1 tbsp
Pepper Jack cheese
1 slice
Chipotle mayonnaise, prepared
2 tsp

Directions

  1. Place two pieces of French toast on a sheet pan.

  2. In a separate pile, stack two sausage patties, 1 folded egg, onion, peppers, and Pepper Jack cheese.

  3. Run through impinger at 425°F for 3 1/2 minutes.

  4. Transfer sausage pile onto one piece of toast. Spread chipotle mayonnaise onto one side of the other piece of toast. Place mayo toast, face down, on top of sandwich. Serve warm.
