Directions

  1. Add beer to a medium sauce pan, reduce over low heat to half the volume.

  2. Season the sirloin with steak seasoning.Grill until cooked to medium. Cut into large dice. Reserve 12 pieces of steak for garnish.

  3. Add remaining steak, beer, and 1 cup tomatoes to cheese sauce. Cook until warm stirring occasionally.

  4. For each build: Transfer 1 1/4 cup cheese sauce mixture to serving bowl. Top with one tablespoon tomatoes, 2 tablespoons carmelized onions and a sprinkle of blue cheese crumbles. Top with 3 pieces of steak. Serve with 10 grilled ciabatta crostini.
