Directions

Step 1
THAI PEANUT SAUCE: Place all ingredients in a food processor and blend until smooth. Allow to chill for service.

TO COMPLETE: Place chick’n strips and EVOO on a small baking sheet. Completely coat chick’n in oil. Place chick’n in a 350 degree convection oven to warm throughout.

Step 3
Once chick’n is hot, place in a small stainless-steel bowl. Add cabbage, red pepper, mango and black beans. Add Thai peanut sauce and half the amount of honey-roasted peanuts. Gently toss to incorporate.

Step 4
Place 3 lettuce cups on a plate. Fill each lettuce cup with chick’n mixture. Garnish with honey-roasted peanuts and fresh cilantro sprigs.
