HERBED MAYONNAISE:

Mayonnaise
1-1/2 tbsp
Fresh lemon juice
1 tsp
Chopped fresh parsley
CHICKEN:

Chicken breasts or Gardein® Plant-Based Chick’n Breasts
Salt and pepper to taste
3 tsp
Chopped fresh parsley
3 tsp
Chopped fresh oregano
1/4 cup
Extra virgin olive oil
1 cucharadas
Lemon, juiced
SANDWICH:
2 cups
Shredded Graviara cheese
2 cups
Grape tomatoes, halved

Directions

  1. Step 1

    Preheat oven to 450°F.

  2. Step 2

    Prepare pickled red onion: In a saucepan, add water, red wine, red wine vinegar and sugar and bring to boil. Add red onion and remove from heat.

  3. Step 3

    Prepare herbed mayonnaise: Mix mayonnaise with lemon juice and add parsley.

  4. Step 4

    Prepare chicken: Season chicken breast with salt and pepper, then place in bowl. Add fresh parsley, fresh oregano, olive oil and lemon. Let marinate for 30 minutes

  5. Step 5

    Line sheet pan with parchment paper. Place marinated chicken breasts on pan and insert in oven. Bake for approximately 20 minutes, flipping halfway through to cook evenly.

  6. Step 6

    Once cooked, remove from oven and let rest for 5-10 minutes. Place chicken breasts on cutting board and slice against the grain into long strips.

  7. Step 7

    Prepare sandwiches: Spread herbed mayonnaise on both bread slices. Add chicken breast on one side of bread, then top with Graviera cheese, grape tomatoes, salt, pepper and pickled onion. Cover with other bread slice.
