Preparation/Cooking Instructions
1. Season roast evenly with salt and pepper. Heat a skillet over medium-high and sear roast quickly until browned on all sides. Add roast and seared drippings to slow cooker and season with chili powder and broth. Cook on low for 7 to 8 hours or until beef shreds easily. 2. Transfer roast to a bowl and shred. Stir in 1 cup enchilada sauce, 1 cup cheese, and green chilies. Preheat oven to 425°F. Grease a 13x9-inch pan and spread 1/2 cup sauce on bottom. 3. Warm tortillas as desired. Divide filling into tortillas, roll tight, and place seam-side down in pan. Pour remaining sauce over tortillas as desired and top with remaining cheese. Bake 15 to 20 minutes until hot and cheese is melted. Garnish with green onion and serve with sour cream, salsa and desired sides.
