Mango, julienned

Jalapeno pepper, julienned
2 cups
Red onion, julienned
2 cups
Scallions, bias sliced
1 cup
Salt

Ground black pepper

Extra virgin olive oil

Tostada shells

Tropical tomato salsa
6 quarts
Sour cream
3 cups
Macadamia nuts, chopped
1 cup

Directions

  1. Make TROPICAL TOMATO SALSA: Julienne mango, jalapeño, red onion and sliced scallions. Combine everything with Angela Mia® Tomato Strips.

  2. Season with salt and pepper, toss with olive oil and toss until well combined.

  3. To Make ONE PORTION: Top each tostada with 1/2 cup of salsa.

  4. Drizzle 1 tablespoon sour cream on top of salsa.

  5. Garnish with 1 teaspoon macademia nuts.

  6. CHEF'S NOTES: Can easily "green it up" by adding herbs. Easy to eat, hand-held dish.
