SPICY RUSTIC TOMATO SAUCE

Olive oil
1 cup
Garlic, smashed
20 cloves
1 (#10) can
Dried basil
6 tbsp
Dried thyme leaves
3 tbsp
Salt
4 tsp
Ground black pepper
2 tsp
Dried oregano
2 tsp
Crushed red pepper flakes
3/4 tsp
Fresh basil, chiffonade
1 cup

Directions

  1. Heat oil in a large skillet or saucepan over medium heat. Add garlic; cook 2 to 3 minutes or until fragrant.

  2. Add tomatoes; stir in dried basil, thyme, salt, black pepper, oregano and red pepper flakes.

  3. Increase heat to high; bring mixture to a boil. Add fresh basil and reduce heat to low. Simmer 1 hour, stirring occasionally.

  4. Adjust seasonings, if necessary.
