Directions

  1. Step 1

    Place a medium-size saucepan over a medium flame.

  2. Step 2

    Add olive oil and sauté onions until tender.

  3. Step 3

    Add spaghetti sauce, zucchini, eggplant and bell pepper.

  4. Step 4

    Bring to a boil, then turn down the heat and simmer for 5 minutes.

  5. Step 5

    Add cheese and serve.
