Extra virgin olive oil

White onion, 1/4" dice
1 cup
3 cups
Zucchini, 1/4" dice
1-1/2 cups
Eggplant, 1/4" dice
1-1/2 cups
Red bell pepper, 1/4" dice
1 cup
Parmesan cheese, shredded
1/2 cup


  1. Place a medium-size saucepan over a medium flame.

  2. Add olive oil and sauté onions until tender.

  3. Add spaghetti sauce, zucchini, eggplant and bell pepper.

  4. Bring to a boil, then turn down the heat and simmer for 5 minutes.

  5. Add cheese and serve.
