Step 1
For the gluten free bechamel: In medium saucepan, melt butter over medium heat. Add flour all at once and whisk constantly until smooth and beginning to turn slightly golden in color, about 3 minutes. Gradually add in 1 ½ cups of milk whisking until mixture is smooth thickened, about 4 minutes. Remove from heat and season with salt, Dijon, and nutmeg. Set aside and keep warm.

Step 2
Preheat oven to 425°F. Mix cheeses together and divide into 2 equal portions. Line baking sheet with parchment and lay out 4 slices of bread. Spread each slice with about 1/4-cup bechamel sauce. Top each with 2 slices black forest ham. Sprinkle half of the grated cheeses evenly over the 4 slices of bread. Top each with an additional slice of bread. Pour the remaining 1 cup of sauce evenly over the sandwiches, then top with the remaining grated cheese.

Bake in preheated oven for 5 to 7 minutes until cheese is melted. Turn the oven to broil and toast until the cheese in bubbling and golden brown, 1 to 2 minutes.

If making Croque Madame:
While sandwiches are baking, heat large non-stick skillet over medium-high heat. Spray skillet with Pam cooking spray. Crack 4 eggs into skillet and season with salt if desired. Reduce heat to medium and continue to cook eggs until whites are set and yolk is cooked to desired doneness. Place an egg atop each sandwich and serve immediately.
