Chopped fresh Italian (flat-leaf) parsley 2 tbsp
Salt 1/4 tsp
Odom's Tennessee Pride® Premium Fresh Country Sausage Tube Mild 72290 81596NaN 1 lb
Chopped yellow onion 1/2 cup
Sweet potato, peeled, cut into 1/2-inch pieces 1 medium
Shredded Cheddar cheese 1/2 cup


  1. Whisk together eggs, parsley and salt in medium bowl until blended; set aside.
  2. Heat large nonstick skillet over medium-high heat. Add sausage; cook 3 minutes, stirring occasionally. Add onion; cook 2 minutes more or until onion is tender and sausage is crumbled and no longer pink.
  3. Meanwhile, place potato pieces in microwave-safe bowl; cover. Microwave on HIGH 3 minutes or until tender, stirring once halfway. Add potato to sausage mixture; stir to combine.
  4. Pour egg mixture over sausage mixture. Cover skillet and reduce heat to medium-low. Cook 10 to 12 minutes or until set. Sprinkle with cheese.
