Cucumber, sliced into half moons 1-1/2 cups
Pepperoncini, drained, thinly sliced 1 cup

Fresh parsley, chopped 1 tbsp
Chicken and Hummus Pita Pocket
Pita pocket, cut in half 1

Prepared garlic hummus 1/4 cup
Chicken breast, grilled, sliced 1 cup
Slaw (see recipe above) 1/4 cup


  1. To make SLAW: Whisk Greek yogurt, lemon juice, spicy brown mustard, salt, garlic powder, thyme and pepper in a small bowl until combined.
  2. Combine cucumber, pepperoncini, red bell pepper and parsley in a large bowl.
  3. Add yogurt mixture and toss to coat; refrigerate until service.
  4. To make CHICKEN AND HUMMUS PITA POCKET: Open pita pocket halves; spread mustard evenly on inside surfaces.
  5. Fill with hummus, chicken and slaw.
