Black Bean Burgers

Burger buns, whole wheat, split 24 ea
Banana peppers, sliced 3 cups
Avocado, sliced 6 ea


  1. To make BLACK BEAN BURGERS: Preheat oven to 400°F.
  2. In a large bowl, combine Ranch StyleŽ Black Beans, rice, flour, RosaritaŽ Fire-Roasted Salsa, eggs and salt. Mix well to combine.
  3. Using a 3-ounce scoop, create 24 burgers and flatten into 3/4-inch thick patties, about 4 inches in diameter.
  4. Sear Black Bean Burgers in a cast iron pan and finish cooking in oven until an internal temperature of 165°F is reached, about 15 minutes.
  5. To make FIRE-ROASTED KETCHUP: In a sauce pot, combine RosaritaŽ Fire-Roasted Salsa, sugar and cayenne pepper. Bring to a boil and simmer for 5 minutes.
  6. In a small bowl, combine cornstarch and water. Whisk well to create a slurry.
  7. Whisk cornstarch slurry into the simmering salsa mixture. Bring to a boil, stirring constantly until thickened. Remove and let cool completely.
  8. To make ONE PORTION, layer the following ingredients on top of the burger bun heel: 1 tablespoon Fire-Roasted Ketchup, 1 Black Bean Burger, 2 tablespoons banana peppers, 3 avocado slices, 1 tablespoon Fire-Roasted Ketchup and 1 burger bun top.
