BAKED CHICKEN BREASTS WITH PEAR TOMATOES AND BALSAMIC VINEGAR

Bone-in chicken breasts 12
Kosher salt 1 tsp
Angela Miaź Whole Peeled Pear Tomatoes with Fresh Basil, undrained27000 381013 lb
Garlic, minced 4 cloves
Dried oregano 2 tsp
Balsamic vinegar 1-1/2 cups
Brown sugar 3/4 cup
Capers, drained 1/2 cup
Fresh basil, chiffonade 1/2 cup
Olive oil 1/3 cup
Black pepper, as needed  

Preparation:

  1. Preheat oven to 400°F.
  2. Lay chicken breasts in single layer in full size hotel pan. Sprinkle salt on chicken.
  3. Combine undrained Angela Miaź Whole Peeled Pear Tomatoes with Fresh Basil, garlic, oregano, balsamic vinegar, brown sugar, capers, basil and olive oil. Evenly distribute over chicken breasts.
  4. Bake 25-30 minutes or until chicken is thoroughly cooked.
